Since we're in the midst of an ice storm here, I decided to make a quick and easy recipe for dinner.
1 lb of stew beef
1 package of brown gravy mix
1 onion chopped
1 bell pepper chopped
Put beef, onion, and bell pepper into crock pot. Mix up gravy mix with water until dissolved. Pour over ingrediants in crockpot and add just enough water to cover. Cook most of the day.
Great served over rice or mashed potatoes
Cost:
1.21 lbs of stew beef $4.83
gravy mix .89
onion .97
pepper .73
rice .99
Total $7.68
Not bad for a family of 4. It comes to $1.92 per person!

Here's one of mine (bachelor eats):
1 lb of ground beef - Approx $3 or $4
2-4 oz of chopped onion (I use the dehydrated stuff but fresh onions taste better) - Approx $1
1 pkg brown gravy mix or 1/2 jar of gravy - $1
1 cup instant rice - Dunno... $0.40 or $0.50 maybe? I buy it in a big box from Sams Club.
1 can corn - $0.49
--------------------------------
Total cost, roughly $6 or $7 for two people. It's a little more expensive than Cheri's recipe, but only takes about 30 minutes to prepare, and even a culinary moron like me can make it.
Brown the ground beef and onion to your liking (add onion to suit your taste). Salt and pepper to taste. Drain off any grease.
Make the instant rice according to directions on the package,
Make the gravy according to the directions. If jar gravy, just heat up a little in the microwave.
Heat up corn in microwave or on stove.
Once everything is done, you can either serve separately or mix it all together to form a great casarole. Peas can also be added, or substituted for the corn.
Makes enough to serve two people, easily adjusted to serve more. Keeps well overnight and re-heats in microwave well, but gets a little greasy if you keep in more than 2 or 3 days.

One of the best deals I have found is the Stoeffers Lasagna.
$8.99 at Target/SuperTargets
$9.99 at the Supermarket
Preheat oven to 400* open pakage of Lasagna, place on cookie sheet.
Toss in oven for 2 hours. Let sit for 10 minutes before serving.
6-8 good sized servings.
Toss in a salad and loaf of Italian Bread and yell "Dinner"!!!!

Great ideas!!
You know when I hear Linda yell dinner, I run over there real fast. :mickeyWalk:  Of course, that delicious meal she makes would feed us two night because my crew is half the size of hers.
