Many years ago when I was a kid, my Gram had a best friend who made the most delicious side dish. It was cucumbers sliced thin, with thin slices of onion, in a creamy sauce (think it was mayo and vinegar or something like that).
Does anyone have an actual recipe for this? I've experimented with it, but just can't seem to get it right. I'd appreciate it if you'd share it with me.

my mother-in-law makes that... and we have it in several local restaurants...
I think she uses sour cream..
If nobody else posts before I see her, I'll find out how she makes it. I do know she squeezes her cucumbers first, to let out the juices.

ok just spoke with my mother-in-law...
here's what she does...
Slice 3-4 cucumbers, place in a bowl & salt. Let them sit for a while & then squeeze out the juice.
Add 1/4 cup vinegar (she uses brown vinegar, - apple cider vinegar) to 1 container of sour cream.
Add 1/4 cup sugar to sour cream mixture.
Combine cucumbers with sour cream mixture & taste... If the dish is too bland, you can add equal parts of vinegar/sugar to taste.

We always had the cucumber/cream dish growing up, too. Always in the summer when cucumbers were fresh. That is about the only time I make it now, too.
For years I tried to make it like my Mom did. But you know how their recipes work: start with some cream, add some sugar, add a little less vinegar :) I could never get it quite right either.
When I went to look at my recipes, I found two and now I can't remember for sure which one I like best. I think it is the first one because I'm not a big fan of dill weed. And I think the second recipe might be one that my sister made from her Taste of Home magazine.
Recipe #1:
Slice:
6 cucumbers
1 onion
Mix together the following:
1 1/2 c. mayo
1/2 c. sugar
1/4 tsp. salt
3 T vinegar
pepper, if you like it
Combine cucumbers, onion, and dressing. I like to make this an hour or so ahead. Consistency and flavor is better.
Recipe #2:
Slice:
4 cucumbers
3 green onions
Mix together the following:
1 c. mayo
1/4 c. sugar
4 tsp. vinegar
1/2 tsp. dill weed
1/2 tsp. salt
Combine cucumbers, onions, and dressing. Cover and chill one hour.
Like Rhonda's mil, my Mom always salted the cucumbers and set them aside, too. I never get started soon enough to do that, but I think I'm going to try it next summer. Doesn't summer sound great :D

Sounds good. I'm going to have to give it a try, but I'll substitute the sugar for splenda.
