If our flight leaves Orlando at 5:15pm, what time should we schedule our towncar pick up if we want to spend as much time as possible in the parks beforehand?
We will be checking luggage.

Are you checking bags or you only have carry-ons?
How many in your party?
Which week day are you departing?
Answer those questions and I will tell you how much time you couls squeeze...LOL

Let's work backwards:
Your flight is 5:15. You need to be at the airport 2 hours before your flight, which is 3:15. It takes roughly 30-40 minutes to get to the airport, so you should leave at about 2:35-2:45. If you have a lot of luggage, figure 10-15 minutes to load up. If you have a little luggage, figure 5-10 minute. That means the car should pull up between 2:20 and 2:40.
Split the dif and make your res for 2:30.

Your town car driver is usually a very good expert at what time to leave the resort. And I've found usually the town car arrives 10-15 minutes before the expected time. The outbound security lines at Orlando are some of the most longest and most difficult that I've found. I also arrived in the airport one day when it took almost 30 minutes just to get up to an e-ticket kiosk. So trust your driver's ideas.
