Our Member - Susan has sent us the following winning recipe!
Chocolate Torte Royale Meringue
2 egg whites
1/2 tsp vinegar
salt
1/2 cup sugar
1/2 tsp cinnamon
Add salt and cinnamon to egg whites and beat until peaks form.
Gradually add sugar and vinegar, beating well after each addition until meringue is stiff. Spread on brown paper in an 8" circle (You must spread or pipe a ridge around the edge to hold filling-I have actually cheated and used a pie plate. Bake at 275F for 1 hour, turn oven off and let cool two hours
Filling
6 oz. semi-sweet chocolate(chocolate chips work fine)
2 egg yolks
1/4 cup water
1 cup heavy cream
1/4 cup sugar
1/4 tsp cinnamon
chopped pecans (optional)
Melt chocolate with water. Spread 2 tbsp over bottom of shell. To remaining chocolate add beaten egg yolks, blend well and chill til thick. Whip cream, sugar, cinnamon and fold into chocolate mixture, spread into shell and chill. Garnish with whipped cream and chopped pecans.
Susan tells us she has doubled this recipe for a bigger crowd, but the pie pans are the easiest. She also does not care for the pecans, as it is such a velvety dessert, the bits of pecans ruin it for her
